[Channel47] Wajima-Born Chef Releases Craft Gin with a Portion of All Proceeds Donated to Those Impacted by the 2024 Noto Earthquake


Channel47, a project using entertainment to promote regional Japanese tourism and culture to the world, has partnered with Yummy Guide, and Touri to help produce and develop a special craft gin imbued with the natural beauty and flavors of the Noto Peninsula in Ishikawa Prefecture. The developer and producer of the new spirit is Akiyoshi Yabunaka, a chef from Wajima City who has worked in some of the world’s most prestigious restaurants.

The product was developed as part of a 2023 effort by the Japan Tourism Agency to increase tourism to local areas and subsequently increase consumption. It’s also being supported with the help of the Wajima City Tourism Association and the Wajima City Morning Market Association as part of an initiative to create new specialty products that appeal to visitors to the city.

Initially, the plan was to unveil the craft gin and another new product being developed to become a local gourmet specialty by hosting a sales demonstration with Chef Yabunaka on the main shopping street in Wajima City. In response to the 2024 Noto Earthquake, all proceeds from product sales after production expenses will be donated to the affected areas to help bolster recovery efforts.

We would like to express our deepest condolences to those who lost their lives in the disaster and to their families. We give our deepest sympathy to all affected and pray for the earliest possible recovery of the affected areas and the safety of those still in the area.

This craft gin was produced by Chef Akiyoshi Yabunaka, who has worked in restaurants around the world and who currently runs the restaurant SECRETO in Kagurazaka, Tokyo. It is made with 17 botanicals and is richly aromatic, filled with the bounty of the mountains and ocean of the chef’s hometown on the Noto Peninsula in Ishikawa Prefecture.
